love these pikelets – easy and delish to make gluten free too!
2c gluten free flour (i use healtheries baking mix)
4tsp gluten free baking powder
4T cooking oil
2c soy milk
dry ingredients then wet ingredients
lumps are okay – just wisk it together – but dont over wisk it!
then dessert spoon into a hot pan with a bit of olivani butter
serve with jam!
or marmite (if you’re not GF!) and if you have some tucked away preciously
ps it makes HEAPS so i often halve the recipe or make them when i’m having guests round… perfect in the lunch box the next day too!
